Ingredients

  • 1 cup fresh lemon juice
  • 1 cup cold water
  • 2 tbsp molasses
  • 1 tbsp brown sugar
  • 0.5 tsp ground cinnamon
  • 0.25 tsp ground cloves
  • 0.25 tsp ground allspice
  • 1 tsp grated fresh ginger
  • 0.5 cup ginger beer or ginger ale for topping
  • Ice cubes

Instructions

  • Combine molasses, brown sugar, cinnamon, cloves, allspice, and fresh ginger with 1/2 cup water in a small saucepan. Heat on low, stirring until sugar dissolves. Let cool.
  • Fill a cocktail shaker with ice. Add lemon juice, the cooled spiced syrup, and the remaining water. Shake until chilled.
  • Strain into a glass filled with ice. Top with ginger beer or ginger ale. Stir gently and serve.

Notes

Adjust spice to taste. Ginger beer gives a bolder kick; ginger ale is milder. The spiced syrup can be made ahead and stored in the fridge. Garnish with a mint sprig for a fresh finish.
