Ingredients

  • 4 cups fresh watermelon cubed and seeds removed

  • 1 cup cold sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish

  • 2-3 fresh basil leaves

The quality of watermelon greatly affects the final taste. Choose a ripe, sweet watermelon for best results.

Instructions

  • Prepare the watermelon: Cut the watermelon into small cubes, removing any seeds.
  • Blend the base: Place watermelon cubes in a blender and process until smooth.
  • Strain the puree: Pour the watermelon puree through a fine mesh strainer into a pitcher to remove pulp.
  • Prepare the ginger: Crush the ginger slices in a small bowl using a muddler or wooden spoon to release the flavors.
  • Combine ingredients: Add the crushed ginger, lime juice, and honey to the watermelon juice. Stir well until honey dissolves completely.
  • Chill the mixture: Refrigerate for at least 30 minutes to allow flavors to blend.
  • Finish and serve: Just before serving, add sparkling water and stir gently. Pour over ice in tall glasses and garnish with mint leaves and lime slices.

Notes

This recipe makes approximately 4 servings and can be prepared up to 24 hours in advance (add sparkling water just before serving). For a stronger ginger flavor, let the crushed ginger steep in the mixture longer.
For a festive presentation, freeze small watermelon chunks to use as ice cubes. This prevents dilution as they melt. The drink can be made into a cocktail by adding 1.5 oz of white rum or vodka per serving.
Those watching sugar intake can reduce or omit the honey. The natural sweetness of ripe watermelon is often sufficient.
