Ingredients
2ozwhite rum
1ripe peachsliced
1ozfresh lime juice
1ozginger simple syrup
6-8fresh mint leaves
Club soda
Ice cubes
Fresh peach slice and mint sprig for garnish
For ginger simple syrup:
1cupwater
1cupsugar
3inchesfresh gingerpeeled and sliced
Instructions
Add peach slices and mint leaves to the shaker. Muddle gently to release oils and juices.
Pour in the rum, lime juice, and ginger simple syrup. Fill the shaker with ice.
Shake vigorously for 15-20 seconds until well chilled.
Strain into a Collins glass filled with fresh ice. Top with club soda.
Stir gently with a bar spoon to combine. Garnish with a peach slice and mint sprig.
To make ginger simple syrup:
Combine water, sugar, and ginger in a small pot.
Bring to a boil, reduce heat, and simmer for 10 minutes.
Let cool completely. Strain and store in the refrigerator.
Notes
The drink tastes best with ripe, in-season peaches.
