Equipment

  • Cocktail shaker
  • Muddler
  • Jigger or measuring cup
  • Fine-mesh strainer
  • Collins glass
  • Bar spoon

Ingredients

  • 2 oz white rum
  • 1 ripe peach sliced
  • 1 oz fresh lime juice
  • 1 oz ginger simple syrup
  • 6-8 fresh mint leaves
  • Club soda
  • Ice cubes
  • Fresh peach slice and mint sprig for garnish

For ginger simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 3 inches fresh ginger peeled and sliced

Instructions

  • Add peach slices and mint leaves to the shaker. Muddle gently to release oils and juices.
  • Pour in the rum, lime juice, and ginger simple syrup. Fill the shaker with ice.
  • Shake vigorously for 15-20 seconds until well chilled.
  • Strain into a Collins glass filled with fresh ice. Top with club soda.
  • Stir gently with a bar spoon to combine. Garnish with a peach slice and mint sprig.

To make ginger simple syrup:

  • Combine water, sugar, and ginger in a small pot.
  • Bring to a boil, reduce heat, and simmer for 10 minutes.
  • Let cool completely. Strain and store in the refrigerator.

Notes

The drink tastes best with ripe, in-season peaches. Yellow or white peaches both work well.
For a non-alcoholic version, replace rum with additional club soda.
The ginger simple syrup keeps for up to 2 weeks when refrigerated in an airtight container.
Double strain the cocktail if you prefer no small bits of mint or peach in the final drink.
