Equipment

  • Cocktail shaker or mason jar with lid
  • Muddler (or wooden spoon as alternative)
  • Fine-mesh strainer
  • Citrus juicer or reamer
  • Jigger or measuring cups/spoons
  • Highball glass
  • Ice cube tray (preferably large cube molds)
  • Cutting board and knife
  • Peeler or zester for garnish
  • Straw (paper or reusable, optional)

Ingredients

For one serving:

  • 1- inch piece fresh ginger peeled and sliced
  • 2 lime wedges plus 1 for garnish
  • 1 tablespoon honey or simple syrup
  • 2 ounces 1/4 cup fresh lime juice
  • 4 ounces 1/2 cup club soda or sparkling water
  • 1/2 cup ice cubes
  • Mint leaves for garnish optional
  • Candied ginger for garnish optional

For a spicier version, add more ginger. If you prefer a sweeter drink, increase the honey or simple syrup.

Instructions

  • Prep the ginger: Peel and thinly slice the fresh ginger.
  • Muddle: Place ginger slices and 2 lime wedges in the bottom of your shaker or mason jar. Add honey or simple syrup. Muddle gently to release the oils and juices.
  • Add liquids: Pour in the fresh lime juice. Fill the shaker halfway with ice.
  • Shake: Secure the lid and shake vigorously for 15-20 seconds until well chilled.
  • Strain and serve: Fill a highball glass with ice. Strain the mixture into the glass.
  • Finish: Top with club soda or sparkling water. Stir gently to combine.
  • Garnish: Add a lime wedge, mint leaves, and/or candied ginger if desired.

This mocktail is best enjoyed immediately while bubbles are fresh and the ice is cold.

    Notes

    This recipe can be easily scaled up for a crowd. Mix a large batch (without ice or soda) and store in the fridge for up to 24 hours.
    For a make-ahead option, create a ginger syrup by simmering 1 cup water, 1 cup sugar, and 1/2 cup sliced ginger for 20 minutes. Strain and refrigerate for up to two weeks.

    Add cucumber slices for a refreshing twist
    Include a few berries for color and flavor
    Replace lime with lemon for a different citrus profile
    Add a dash of cinnamon for a warming effect
    For a lower-sugar version, use stevia or monk fruit sweetener instead of honey or simple syrup.
