Equipment

  • Highball glass or mason jar
  • Muddler (or wooden spoon as alternative)
  • Measuring jigger or tablespoon
  • Cocktail spoon for mixing
  • Citrus juicer (optional)
  • Ice cube tray
  • Cutting Board
  • Sharp knife

Ingredients

For one serving:

  • 8-10 fresh mint leaves
  • 1 lime cut into quarters
  • 1-2 tablespoons simple syrup or 2 teaspoons sugar
  • 4-6 ounces ginger beer chilled
  • Ice cubes
  • Mint sprig and lime wheel for garnish

Simple Syrup

  • 1 cup water
  • 1 cup granulated sugar

The quality of ingredients matters in this recipe.

Instructions

  • Prepare the glass: Add mint leaves and 2 lime quarters to your glass.
  • Muddle gently: Using a muddler or wooden spoon, press the mint and lime to release their oils and juice. Don't over-muddle the mint as it can become bitter.
  • Add sweetener: Pour in the simple syrup or add sugar directly to the muddled mixture.
  • Add ice: Fill the glass about 3/4 full with ice cubes.
  • Pour ginger beer: Slowly add the chilled ginger beer to fill the glass.
  • Stir and garnish: Gently stir the mixture with a spoon. Garnish with a mint sprig and lime wheel.

Notes

The mocktail can be customized to suit different tastes. For a sweeter version, add more simple syrup.
For extra zing, increase the lime juice or add a dash of fresh ginger juice.
Store-bought ginger beer works well, but the spice level varies by brand. Start with less if using a particularly spicy brand. Diet ginger beer can be substituted for a lower-calorie option.
This recipe scales easily for parties. Prepare a large batch by multiplying all ingredients except ginger beer. Add the ginger beer individually to each glass to maintain carbonation.
For a special touch, freeze mint leaves in ice cubes to add visual appeal.
