Ingredients

  • 2 cups dark rum or spiced rum
  • 4 cups ginger beer spicy preferred
  • 0.5 cup freshly squeezed lime juice
  • 0.25 cup simple syrup sweeten to taste
  • lime wheels for garnish
  • fresh mint sprigs optional, for garnish
  • ice cubes enough to fill glasses or bowl

Instructions

  • Fill a punch bowl or pitcher with plenty of ice.
  • Pour in the dark rum and ginger beer.
  • Add the lime juice and simple syrup.
  • Stir gently to combine. Taste and adjust sweetness or lime if needed.
  • Pour into glasses packed with fresh ice. Garnish with lime wheels and mint sprigs if desired.
