Chill all juice and soda ingredients ahead of time.
In a large mixing bowl, combine apple cider, pineapple juice, lime juice, and lemonade concentrate.
Stir in honey until dissolved.
Add ginger ale or citrus soda slowly for a fizzy effect.
Wrap cinnamon sticks, allspice, cloves, and bay leaf in cheesecloth or use a tea infuser. Let steep in the mixture for 10–20 minutes.
Add 1 cup of ice and stir gently. Remove the spice bundle and strain if needed.
Add your alcohol of choice, or skip for a mocktail version.
Float apple and orange slices on top.
Garnish with cranberries or a maraschino cherry on cocktail picks.
Add more ice to the punch bowl just before serving and ladle into cups.
