Equipment

  • High-powered blender
  • Measuring cups and spoons
  • Citrus juicer
  • Margarita glasses
  • Ice cube trays

Ingredients

  • 2 cups frozen pineapple chunks
  • 1/2 cup fresh lime juice
  • 1/4 cup fresh orange juice
  • 1/4 cup coconut cream
  • 2 tablespoons agave nectar
  • 2 cups ice cubes

Optional garnishes: pineapple wedges, lime wheels, tajin seasoning

Instructions

  • Add frozen pineapple, lime juice, orange juice, coconut cream, and agave nectar to the blender.
  • Pour in ice cubes.
  • Blend on high speed for 30-45 seconds until smooth and slushy.
  • Taste and add more agave if needed for sweetness.
  • Pour into margarita glasses rimmed with tajin seasoning if desired.
  • Garnish with fresh pineapple wedges and lime wheels.

Notes

The mocktail can be made ahead and stored in the freezer for up to 2 hours before serving.
For best results, use fresh pineapple frozen in chunks rather than store-bought frozen pineapple.
To make it less sweet, reduce the agave nectar to 1 tablespoon.
The recipe makes 2-3 servings depending on glass size.
