Equipment

  • Measuring cups and spoons
  • Citrus juicer
  • Cocktail glasses (chilled)
  • Small plate and salt (optional, for rim)

Ingredients

  • 2 cups frozen pineapple chunks
  • 2 oz silver (blanco) tequila
  • 1 oz triple sec or Cointreau orange liqueur
  • 1 oz lime juice fresh
  • 0.5 oz simple syrup or agave syrup to taste
  • 1 cup ice cubes
  • fresh pineapple slices for garnish
  • coarse salt for optional rim

Instructions

  • Add frozen pineapple chunks and ice cubes to a blender.
  • Pour in tequila, triple sec (or Cointreau), fresh lime juice, and simple or agave syrup.
  • Blend on high until smooth and creamy; stop to scrape down sides as needed.
  • Taste and adjust with a little more syrup (sweeter) or lime juice (tarter).
  • Optional: Rim chilled glasses with lime and dip in coarse salt.
  • Pour into glasses and garnish with pineapple slices. Serve immediately.

Notes

Use reposado tequila for a warmer, oaky note. If too thick, blend in a splash of water or extra lime juice; if too thin, add more frozen pineapple. Fresh pineapple works too—just add extra ice to keep it frosty.
