Equipment

  • Large pitcher
  • Measuring cups and spoons
  • Long spoon
  • Blender (optional for slushy texture)
  • Citrus juicer
  • Strainer (optional)
  • Tall glasses
  • Ice cube tray
  • Knife and cutting board
  • Cocktail picks (for garnish)

Ingredients

  • 2 cups pineapple juice fresh or bottled
  • 1 cup mango juice or tropical punch
  • 0.5 cup coconut cream or cream of coconut
  • 1 cup ginger ale or lemon-lime soda
  • 1 cup sparkling water or club soda
  • 2 tbsp lime juice fresh
  • 1 cup crushed ice or ice cubes
  • vanilla ice cream optional, for creamy punch
  • pineapple wedges, maraschino cherries, shredded coconut for garnish

Instructions

  • Pour pineapple juice, mango juice, and coconut cream into a large pitcher. Stir until coconut cream is fully mixed.
  • Add ginger ale and sparkling water for fizz.
  • Squeeze in lime juice. Stir gently.
  • Fill glasses with crushed ice. Pour punch over ice.
  • Blend with ice for a frosty texture if desired.
  • Garnish with pineapple wedge, cherry, and coconut if desired. Serve immediately.

Notes

Fresh pineapple juice gives the best flavor, but bottled is fine. Add a scoop of vanilla ice cream for a dessert version. Keep punch chilled and serve right away for best fizz. Coconut milk can be used instead of cream for a lighter drink.
