Ingredients

  • 1 cup coconut milk or coconut cream coconut cream is richer
  • 0.5 cup pineapple juice
  • 0.5 cup coconut water
  • 1-2 tbsp honey, agave syrup, or simple syrup sweeten to taste
  • 0.5 cup sparkling water or club soda
  • 1 tbsp shredded coconut or toasted coconut flakes for garnish
  • 1-2 lime wheels for garnish
  • 4-5 mint leaves plus extra for garnish
  • 1 cup ice cubes
  • 1 tsp sugar optional, for extra sweetness

Instructions

  • Blend coconut milk, pineapple juice, coconut water, and sweetener with a good handful of ice until smooth and frothy.
  • Pour the mixture into a tall glass, leaving room at the top.
  • Gently stir in sparkling water or club soda with a spoon.
  • Rim the glass with shredded or toasted coconut if desired. Garnish with a lime wheel and fresh mint sprig.

Notes

Use coconut cream for a dessert-like mocktail; coconut milk keeps it lighter. Add more pineapple juice for sweetness. Toast coconut flakes for a nutty garnish. Squeeze the lime wheel for extra citrus zing.
