Ingredients

  • 1 cup coconut milk
  • 0.5 cup pineapple juice
  • 1 tbsp blue raspberry syrup or blue sports drink
  • 1 tbsp simple syrup or honey to taste
  • 0.5 cup lemon-lime soda or sparkling water
  • 1 cup ice cubes
  • shredded coconut for garnish
  • blueberries for garnish

Instructions

  • In a blender, combine coconut milk, pineapple juice, blue raspberry syrup, simple syrup, and ice. Blend until frothy and smooth.
  • Pour the blue mixture into glasses, filling 2/3 full.
  • Top with lemon-lime soda or sparkling water. Stir gently to combine and keep it fizzy.
  • Garnish with shredded coconut and a few blueberries for a wintery look. Serve immediately.

Notes

For extra chill, rim glasses with coconut or use frozen blueberries as ice. Add more blue syrup for bolder color. This mocktail is best served fresh and fizzy!
