Equipment

  • Cocktail shaker
  • Martini glass or any glass
  • Measuring jigger or small cup
  • Strainer
  • Spoon or stirring stick
  • Ice

Ingredients

  • 2 oz pineapple juice
  • 1 oz lemon-lime soda
  • 1 oz simple syrup adjust for sweetness
  • 0.5 oz blue curaçao syrup (non-alcoholic)
  • 2-3 drops green food coloring
  • ice
  • fresh pineapple slice or maraschino cherry optional, for garnish

Instructions

  • Add ice to the cocktail shaker until halfway full.
  • Pour in pineapple juice, simple syrup, and blue curaçao syrup.
  • Add lemon-lime soda gently to avoid too much fizz.
  • Add green food coloring and close the shaker tightly.
  • Shake well (about 10 seconds) so colors and flavors mix.
  • Strain the mixture into a martini glass or serving glass.
  • Garnish with pineapple slice or maraschino cherry if you like.

Notes

Fresh pineapple juice tastes best, but canned is fine. Add more simple syrup for extra sweetness. Use blue curaçao syrup (not liqueur) to keep it non-alcoholic. Chill glass for extra cold mocktail. For more bubbles, add soda at the end and stir gently. A garnish station is fun for parties!
