Equipment

  • Cocktail shaker
  • Juice squeezer or citrus press
  • Measuring spoons and cups
  • Punch bowl or large pitcher
  • Short glasses or margarita glasses
  • Small knife and spoon
  • Ice bucket or bowl
  • Strainer (optional)
  • Stirring spoon

Ingredients

  • 1 cup freshly squeezed lime juice
  • 1 cup orange juice no pulp, chilled
  • 4 tablespoons simple syrup or agave syrup, to taste
  • 2 cups club soda or sparkling water
  • 1/2 cup limeade
  • 2 cups ice plus more as needed
  • lime slices for rimming and garnish
  • black grapes or blueberries for eyeball garnish
  • lychee fruit canned or fresh, for eyeball garnish
  • margarita mix optional, if no limeade
  • salt or sugar for rimming the glasses

Instructions

  • Fill your cocktail shaker with ice cubes.
  • Pour in the lime juice, orange juice, and limeade.
  • Add the simple syrup or agave. Shake until chilled.
  • Strain into serving glasses over fresh ice.
  • Top each glass with club soda or sparkling water.
  • For the eyeball effect, push a black grape or blueberry inside a lychee, then float it in each glass.
  • Rim glasses with lime and dip in salt or sugar for extra flavor, if desired.

Notes

Adjust sweetness with more or less syrup. Pat lychees dry if canned. Pineapple juice can swap for orange juice for a twist. For big groups, mix everything except club soda in advance and add bubbles before serving. Frozen blueberries or grapes work as eyeballs if lychee isn’t available.
