This cocktail is all about the delicate taste of elderflower, sweet peach, and those sparkling bubbles. I find it super easy to make, and it just works for warm days or hanging out with friends.

Notes
I like serving this drink right away so the bubbles stay lively. If I’m in the mood for something sweeter, a splash of simple syrup does the trick.Crushed ice makes it extra cold and refreshing, though regular ice cubes are just fine too.For a group, I’ll multiply the recipe for a pitcher, muddle the peaches, and mix everything except the sparkling water. When it’s time to serve, I pour over ice and top each glass with soda so it doesn’t go flat.Sometimes I’ll swap in different fruit garnishes—berries, maybe an orange twist. But elderflower and peach always steal the show.
