Ingredients

For one cocktail:

  • 2 oz silver tequila
  • 1 oz fresh lime juice
  • 3/4 oz triple sec
  • 1/2 oz simple syrup
  • 1 fresh egg white
  • Ice for shaking
  • Lime wheel for garnish

Use high-quality tequila for the best flavor. Fresh lime juice is a must - bottled versions won't taste as bright.

Instructions

  • Separate the egg white into the shaker.
  • Add tequila, lime juice, triple sec, and simple syrup.
  • Shake hard without ice for 10-15 seconds to emulsify the egg white.
  • Add ice and shake again for 10-15 seconds to chill.
  • Double-strain into a chilled cocktail glass.
  • Garnish with a lime wheel on the rim.

The "dry shake" without ice helps the egg white get foamy. Meanwhile, shaking again with ice chills and dilutes the drink properly.

    Notes

    This drink contains raw egg white. Use very fresh eggs and avoid serving to people with weakened immune systems.
    For a vegan version, try using aquafaba (chickpea liquid) instead of egg white.
    Make sure all ingredients are well-chilled before mixing for the best texture.
    The cocktail can be customized with different fruit juices or liqueurs for variety.
