Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice about 1 medium lime
  • 1/2 cup fresh dragonfruit cubed (pink variety for best color)
  • 10-12 fresh mint leaves plus extra for garnish
  • 1 tablespoon sugar or simple syrup
  • Soda water about 2 oz
  • Ice cubes
  • Lime wheel for garnish

Optional: 1 teaspoon dragonfruit seeds for texture and visual appeal

Instructions

  • Toss your dragonfruit cubes into the cocktail shaker and muddle them gently to get the juice flowing.
  • Add the mint leaves and give them a light muddle along with the dragonfruit—just enough to release those minty oils.
  • Pour in the rum, squeeze in fresh lime juice, and add your sugar or simple syrup.
  • Fill the shaker halfway with ice and shake it hard for about 15-20 seconds until everything's nice and cold.
  • Fill a highball glass with fresh ice cubes. Big cubes work best, but use what you've got.
  • Strain the mixture through a fine mesh strainer into your glass so you don't get any bits.
  • Top it off with soda water and give it a gentle stir with a bar spoon.
  • Finish with a mint sprig and a lime wheel for garnish. Looks fancy, right?

Feel free to tweak the recipe. Like it sweeter? Add more simple syrup. Craving a bolder mint flavor? Toss in a few extra leaves or muddle with a bit more enthusiasm.
Some people love the crunch of dragonfruit seeds—kind of like kiwi seeds. If you prefer a smoother drink, you can strain out the muddled dragonfruit before mixing in the other stuff.
Want to skip the booze? Just swap the rum for extra soda water or coconut water. You'll still get plenty of those tropical notes.
Leftover dragonfruit? Store it in an airtight container in the fridge for up to three days. It freezes well too, so you can save some for your next round of cocktails.
