Equipment

  • Cocktail shaker
  • Hawthorne strainer
  • Fine-mesh strainer
  • Jigger or measuring tool
  • Muddler
  • Coupe or martini glass
  • Knife and cutting board

Ingredients

  • 2 oz white rum
  • 1 oz fresh lime juice
  • 3/4 oz simple syrup
  • 2 oz fresh dragon fruit cubed (about 1/4 medium dragon fruit)
  • Ice for shaking
  • Dragon fruit slice for garnish optional

Instructions

  • Cut the dragon fruit in half and scoop out the flesh. Cut into small cubes.
  • Add the dragon fruit cubes to a cocktail shaker and muddle until broken down into a pulp.
  • Pour in the rum, lime juice, and simple syrup.
  • Fill the shaker with ice and shake vigorously for 10-15 seconds.
  • Double strain through a Hawthorne strainer and fine-mesh strainer into a chilled coupe glass.
  • Garnish with a thin dragon fruit slice if desired.

Notes

Store leftover dragon fruit in an airtight container in the fridge for up to 3 days. The cocktail tastes best when made with fresh fruit.
For a frozen version, blend all ingredients with 1 cup of ice instead of shaking.
The drink should be a vibrant pink color. If using white-fleshed dragon fruit, add 1-2 drops of red food coloring to achieve the signature pink hue.
