Instructions
Cut the dragon fruit in half and scoop out the flesh. Cut into small cubes.
Add the dragon fruit cubes to a cocktail shaker and muddle until broken down into a pulp.
Pour in the rum, lime juice, and simple syrup.
Fill the shaker with ice and shake vigorously for 10-15 seconds.
Double strain through a Hawthorne strainer and fine-mesh strainer into a chilled coupe glass.
Garnish with a thin dragon fruit slice if desired.
Notes
Store leftover dragon fruit in an airtight container in the fridge for up to 3 days. The cocktail tastes best when made with fresh fruit.For a frozen version, blend all ingredients with 1 cup of ice instead of shaking.The drink should be a vibrant pink color. If using white-fleshed dragon fruit, add 1-2 drops of red food coloring to achieve the signature pink hue.
