2ozcoffee liqueur (Kahlúa or similar)or 2 oz vodka
2ozcoconut cream
1ozlime juicefreshly squeezed preferred
1ozgrenadine
4ozSpriteor another lemon-lime soda
1cupice cubes
1tbspcoconut flakesfor garnish
Instructions
Rim a tall glass with lime juice, then dip into coconut flakes.
Fill a cocktail shaker halfway with ice.
Add coconut cream, lime juice, and grenadine along with your choice of liqueur.
Shake for about 15 seconds until well chilled.
Strain into the prepared glass filled with fresh ice.
Top with lemon-lime soda and stir gently.
Garnish with extra coconut flakes and serve immediately.
Notes
Use light coconut cream for a less heavy drink. For a boozier version, add a splash of coconut rum. Reduce grenadine or use diet soda for a less sweet drink. Toasting the coconut flakes adds a nutty flavor.
