Equipment

  • Cocktail shaker
  • Jigger or small measuring cup
  • Strainer
  • Tall glass or tumbler (10–12 ounces)
  • Bar spoon
  • Small plate
  • Shallow bowl
  • Ice scoop or tongs

Ingredients

  • 2 oz coffee liqueur (Kahlúa or similar) or 2 oz vodka
  • 2 oz coconut cream
  • 1 oz lime juice freshly squeezed preferred
  • 1 oz grenadine
  • 4 oz Sprite or another lemon-lime soda
  • 1 cup ice cubes
  • 1 tbsp coconut flakes for garnish

Instructions

  • Rim a tall glass with lime juice, then dip into coconut flakes.
  • Fill a cocktail shaker halfway with ice.
  • Add coconut cream, lime juice, and grenadine along with your choice of liqueur.
  • Shake for about 15 seconds until well chilled.
  • Strain into the prepared glass filled with fresh ice.
  • Top with lemon-lime soda and stir gently.
  • Garnish with extra coconut flakes and serve immediately.

Notes

Use light coconut cream for a less heavy drink. For a boozier version, add a splash of coconut rum. Reduce grenadine or use diet soda for a less sweet drink. Toasting the coconut flakes adds a nutty flavor.
