Ingredients

  • 3 cups seedless watermelon cubed (about ½ medium watermelon)
  • 1 medium cucumber thinly sliced (reserve 4 slices for garnish)
  • ¼ cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or agave nectar adjust to taste
  • 8-10 fresh mint leaves plus extra for garnish
  • 2 cups sparkling water or club soda chilled
  • Ice cubes
  • Optional: 1 tablespoon fresh ginger grated
  • Optional garnishes: watermelon wedges cucumber ribbons, lime wheels

The watermelon should be ripe and sweet for the best flavor. English cucumbers work well because they have fewer seeds and a thinner skin.

Instructions

  • Prepare the watermelon base: Cut watermelon into 1-inch cubes. Place in blender and puree until smooth, about 30 seconds.
  • Strain the puree: Pour watermelon puree through a fine mesh strainer into a bowl, pressing with a spoon to extract all juice. Discard solids.
  • Muddle the cucumber: Place cucumber slices (except those for garnish) and mint leaves in the pitcher. Gently muddle to release flavors without completely crushing.
  • Mix the base: Add watermelon juice, lime juice, and honey to the pitcher. Stir until honey dissolves completely.
  • Chill and finish: Refrigerate mixture for at least 30 minutes. Just before serving, add sparkling water and stir gently.
  • Serve: Fill glasses with ice, pour in the mocktail, and garnish with reserved cucumber slices, mint leaves, and optional watermelon wedges.

The mocktail is best served immediately after adding sparkling water to maintain the fizz.

    Notes

    This mocktail stays fresh in the refrigerator for up to 24 hours without the sparkling water. Add the sparkling water only when ready to serve.
    For an adult version, add 1.5 oz vodka or white rum per serving. The watermelon cucumber base can also be frozen into ice cubes to add to plain sparkling water for a lighter drink option.
    People with diabetes may substitute honey with a sugar-free sweetener. For extra flavor, try adding a few basil leaves or a dash of cinnamon.
    Make-ahead tip: Prepare the watermelon-cucumber base a day in advance and store covered in the refrigerator. The color may darken slightly but the flavor remains good.
