Ingredients

  • 2 oz tequila or mezcal
  • 1 oz fresh lime juice
  • 0.75 oz simple syrup or agave syrup or honey syrup
  • 3-4 slices fresh cucumber
  • 2-3 leaves mint optional
  • 1 slice jalapeño optional, for a little kick
  • 2 oz club soda or sparkling water
  • salt rim for the glass
  • lime wheel and cucumber slice for garnish

Instructions

  • Rim your glass with lime juice and dip it in salt.
  • Drop cucumber, mint, and jalapeño into your shaker and muddle gently.
  • Pour in tequila, lime juice, and syrup.
  • Add ice and shake it up for about 10 seconds.
  • Strain everything into your prepared glass over fresh ice.
  • Top it off with club soda or sparkling water.
  • Give it a quick stir with your bar spoon.
  • Garnish with a lime wheel and cucumber slice.

Notes

English cucumbers work best for their thin skin and mellow flavor. Adjust sweetness by varying the syrup. For a lighter cocktail, add more sparkling water. The base can be pre-mixed and finished with soda before serving. Use mezcal for a smoky twist. Always serve very cold with plenty of ice.
