Equipment

  • Gather a cocktail shaker, muddler, and strainer.
  • You'll also want a jigger or measuring cup for accurate pours.
  • A sharp knife and cutting board are needed to slice the cucumber and chop the mint.
  • For serving, pick out a tall glass like a highball or Collins glass.
  • Don't forget ice - both for shaking and for serving.
  • A long spoon for stirring and a garnish pick for the cucumber slice are helpful too.

Ingredients

  • 2 oz silver tequila
  • 1 oz fresh lime juice
  • 0.75 oz simple syrup
  • 3-4 cucumber slices
  • 8-10 fresh mint leaves
  • Club soda
  • Ice
  • Cucumber slice and mint sprig for garnish

The recipe serves one. For a larger batch, just scale up the amounts. Make sure to use fresh ingredients for the best taste. Pick ripe cucumbers and bright green mint leaves.

Instructions

  • Add cucumber slices and mint leaves to the shaker.
  • Muddle gently to release flavors.
  • Pour in tequila, lime juice, and simple syrup.
  • Fill shaker with ice and shake well for 10-15 seconds.
  • Strain into an ice-filled glass.
  • Top with a splash of club soda.
  • Stir gently to mix.
  • Garnish with a cucumber slice and mint sprig.

Adjust sweetness by adding more or less simple syrup to taste. For extra cucumber flavor, you can muddle an extra slice or two.

    Notes

This cocktail is best enjoyed fresh. The flavors of cucumber and mint can become bitter if left to sit too long. If you're making it ahead of time, leave out the club soda until serving.
For a spicy kick, try adding a slice of jalapeño when muddling. You can also rim the glass with salt for a margarita-like touch.
To make it a mocktail, skip the tequila and use more club soda. The cucumber and mint still make for a tasty, alcohol-free drink.
Try using different types of tequila to change up the flavor. A reposado tequila can add subtle oak notes to the drink.
