Ingredients

  • 2 medium cucumbers peeled and chopped

  • 4 cups cold water
  • 1 cup sparkling water optional

Instructions

Prepare the cucumber base:

  • Peel and roughly chop the cucumbers. Then, blend them in a food processor or blender until smooth.

Strain the mixture:

  • Pour the cucumber puree through a fine-mesh strainer into a pitcher. Press with a spoon to extract all the juice and discard the pulp.

Add mint:

  • Place mint leaves in the pitcher and muddle gently to release the oils and flavor.

Mix the lemonade:

  • Add the fresh lemon juice and honey or simple syrup to the pitcher. Stir until the sweetener dissolves completely.

Dilute and chill:

  • Add cold water and stir well. Then, taste and adjust sweetness if needed.

Serve:

  • Fill glasses with ice cubes. Pour the mocktail over ice and top with a splash of sparkling water if using. Garnish with cucumber slices, lemon wheels, and fresh mint sprigs.

Rest before serving:

  • For best results, refrigerate for at least 1 hour before serving to allow flavors to meld.

This recipe makes approximately 6-8 servings. The mocktail keeps well in the refrigerator for up to 2 days, though the mint may darken slightly.
For a stronger cucumber flavor, freeze cucumber slices to use as ice cubes. These won't dilute your drink as they melt.
