Ingredients
2medium cucumberspeeled and chopped
1/2cupfresh mint leaves
4tablespoonsfresh lime juice
3tablespoonssimple syrup
2cupssparkling water

Extra cucumber slices and mint sprigs for garnish
Instructions
Peel and chop the cucumbers into small pieces.
Place cucumber pieces and mint leaves in the blender. Blend until smooth.
Strain the mixture through a fine-mesh strainer into a pitcher.
Add lime juice and simple syrup to the strained liquid. Stir well.
Fill glasses with ice cubes.
Pour the cucumber-mint mixture into each glass, filling about 1/3 full.
Top with sparkling water and stir gently.
Garnish with cucumber slices and fresh mint sprigs.
