Ingredients

  • 2 medium cucumbers peeled and chopped
  • 1/2 cup fresh mint leaves
  • 4 tablespoons fresh lime juice
  • 3 tablespoons simple syrup
  • 2 cups sparkling water
  • Ice cubes
  • Extra cucumber slices and mint sprigs for garnish

Instructions

  • Peel and chop the cucumbers into small pieces.
  • Place cucumber pieces and mint leaves in the blender. Blend until smooth.
  • Strain the mixture through a fine-mesh strainer into a pitcher.
  • Add lime juice and simple syrup to the strained liquid. Stir well.
  • Fill glasses with ice cubes.
  • Pour the cucumber-mint mixture into each glass, filling about 1/3 full.
  • Top with sparkling water and stir gently.
  • Garnish with cucumber slices and fresh mint sprigs.

Notes

The drink stays fresh in the fridge for up to 24 hours without sparkling water added.
Make simple syrup by heating equal parts water and sugar until dissolved.
For a sweeter drink, add more simple syrup one teaspoon at a time.
Replace regular sparkling water with lime-flavored sparkling water for extra zest.
Freeze extra cucumber-mint mixture in ice cube trays for future drinks.
