Ingredients

  • 2 cups honeydew melon cubed
  • 1 medium cucumber peeled and chopped
  • 8 fresh mint leaves
  • 2 tablespoons lime juice
  • 2 tablespoons honey or agave nectar
  • 1 cup cold water
  • Club soda
  • Ice cubes
  • Cucumber ribbons and mint sprigs for garnish

Instructions

  • Peel and chop the cucumber. Remove seeds if desired.
  • Cut the honeydew melon into 1-inch cubes.
  • Add melon, cucumber, mint leaves, lime juice, honey, and water to the blender.
  • Blend until smooth, about 30-45 seconds.
  • Strain the mixture through a fine-mesh strainer into a pitcher.
  • Fill tall glasses with ice cubes.
  • Pour the strained mixture into glasses, filling them 3/4 full.
  • Top each glass with club soda.
  • Garnish with cucumber ribbons and mint sprigs.

Notes

The mocktail can be stored in the fridge for up to 24 hours before adding club soda.
For extra sweetness, adjust honey or agave to taste.
Using cold ingredients creates the best results.
Make cucumber ribbons using a vegetable peeler for an elegant garnish.
