Ingredients

For one cocktail:

  • 3-4 thin cucumber slices plus extra for garnish
  • 2 oz fresh melon puree honeydew or cantaloupe work best
  • 1 oz vodka
  • ½ oz fresh lime juice
  • ½ oz simple syrup
  • Club soda or sparkling water about 2 oz
  • Ice cubes
  • Mint leaves for garnish optional

Instructions

  • Prepare the melon puree: Cut melon into chunks and blend until smooth. Strain if needed to remove fibrous bits.
  • Muddle the cucumber: Place cucumber slices in the bottom of a cocktail shaker and gently muddle to release the flavors.
  • Add the liquids: Pour in the melon puree, vodka, lime juice, and simple syrup.
  • Shake well: Add ice to the shaker and shake vigorously for about 15 seconds.
  • Strain and serve: Strain the mixture into a highball glass filled with ice.
  • Top with fizz: Add club soda or sparkling water and stir gently.
  • Garnish: Add a cucumber slice and mint leaves if desired.

The cocktail should be a light green color with a refreshing aroma of cucumber and melon.

    Notes

    This cocktail is best served immediately while the fizz is fresh. You can prepare the melon puree ahead of time and store it in the refrigerator for up to 2 days.
    For a sweeter drink, add more simple syrup. For a more tart version, increase the lime juice.
    Try different melons to vary the flavor profile. Watermelon creates a pinker drink with a lighter taste, while honeydew gives a bright green color and stronger melon flavor.
    For parties, you can make a pitcher by multiplying the ingredients, but add the club soda individually to each glass just before serving to maintain the fizz.
