Ingredients

  • 2 medium cucumbers peeled and chopped
  • 4 limes 3 for juicing, 1 for garnish
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 2-3 tablespoons honey or simple syrup adjust to taste
  • 4 cups sparkling water or club soda
  • Ice cubes
  • Optional: 1 tablespoon ginger freshly grated
  • Optional: Mint sprigs and cucumber slices for garnish

For best results, use fresh cucumbers without wax coating. English or Persian cucumbers work particularly well for this recipe.

Instructions

Prepare the cucumber base:

  • Peel and roughly chop the cucumbers. Add them to a blender with 1/4 cup of water and blend until smooth.

Strain the mixture:

  • Pour the blended cucumber through a fine mesh strainer into a pitcher, pressing with a spoon to extract all the juice. Discard the pulp.

Add flavors:

  • Juice 3 limes and add to the pitcher. Add the mint leaves and muddle gently to release the oils.

Sweeten the mixture:

  • Stir in the honey or simple syrup until dissolved. If using ginger, add it now.

Finish the drink:

  • Add sparkling water to the pitcher and stir gently to combine. Taste and adjust sweetness if needed.

Serve:

  • Fill glasses with ice, pour in the spritzer, and garnish with cucumber slices, mint sprigs, and lime wheels.

Store:

  • Keep refrigerated for up to 24 hours. The mixture may separate, so stir before serving.

Notes

This mocktail can be customized in several ways. For a spicier version, add a few slices of jalapeño. For a more tropical flavor, replace one cucumber with a cup of pineapple chunks.
The base mixture (without sparkling water) can be prepared up to a day ahead and stored in the refrigerator.
Add the sparkling water just before serving to maintain carbonation.
For a more intense flavor, let the cucumber, lime, and mint mixture sit for 30 minutes before adding sparkling water.
This recipe serves 4-6 people depending on glass size.
For a larger batch, simply double the ingredients but add sparkling water gradually to taste.
