Ingredients

  • 2 medium cucumbers about 2 cups when sliced
  • 1 cup fresh lemon juice about 6-8 lemons
  • 1/3 cup honey or simple syrup adjust to taste
  • 4 cups sparkling water chilled
  • 1/4 cup fresh mint leaves optional
  • Ice cubes
  • Lemon slices and cucumber ribbons for garnish

For a sugar-free version, substitute honey with stevia or monk fruit sweetener.

Instructions

  • Peel and roughly chop one cucumber. Place in blender and process until smooth.
  • Strain the cucumber puree through a fine mesh strainer into a pitcher, pressing with a spoon to extract all liquid.
  • Add fresh lemon juice to the cucumber juice and stir well.
  • Mix in honey or simple syrup until completely dissolved.
  • Slice the second cucumber into thin rounds for garnish and set aside.
  • Fill glasses with ice cubes. If using mint, add a few leaves to each glass and lightly muddle.
  • Pour the cucumber-lemon mixture over ice, filling glasses about halfway.
  • Top with chilled sparkling water and gently stir.
  • Garnish with cucumber slices, lemon wheels, and mint sprigs.
  • Serve immediately for the best flavor and fizz.

The base mixture can be prepared up to 24 hours ahead and refrigerated.

    Notes

    This recipe makes about 4-6 servings depending on glass size. The cucumber-lemon base can be stored in the refrigerator for up to 3 days.
    For a more intense cucumber flavor, don't peel the cucumbers. The skin contains lots of flavor, though it will give the drink a deeper green color.
    Try infusing the simple syrup with herbs like rosemary or basil for a twist. For a spicy kick, add a few thin slices of jalapeño to the mix.
    This mocktail can easily become a cocktail by adding 1-2 ounces of gin or vodka per serving. For kids, replace sparkling water with lemon-lime soda for a sweeter version.
