Ingredients

  • 2 cups cold water or sparkling water

Instructions

Prepare the cucumber base:

  • Peel and roughly chop the cucumber.
  • Add to blender with 1/4 cup water.
  • Blend until smooth, about 30 seconds.
  • Strain through fine mesh strainer, pressing to extract juice.

Mix the ingredients:

  • In a pitcher, combine cucumber juice and lemon juice.
  • Add honey or agave and stir until dissolved.
  • Gently muddle mint leaves in the pitcher to release oils.
  • Add remaining water and stir well.

Chill and serve:

  • Refrigerate mixture for at least 30 minutes.
  • Fill glasses with ice.
  • Pour cooler over ice.
  • Garnish with cucumber slices, lemon wheels, and mint sprigs.

For sparkling version:

  • Add sparkling water just before serving instead of still water.

Notes

This recipe yields about 4 servings (8 oz each) and can be prepared up to 24 hours in advance. Store in a sealed container in the refrigerator, but add garnishes only when serving.
For a stronger cucumber flavor, let the blended cucumber sit for 10 minutes before straining. The natural sugars can be adjusted based on the sweetness of your lemons and personal preference.
