Equipment

  • Blender or food processor
  • Fine-mesh strainer
  • Muddler or wooden spoon
  • Measuring cups and spoons
  • Pitcher (for larger batches)
  • Highball glasses for serving
  • Ice cube tray
  • Cutting board and knife
  • Vegetable peeler (optional for cucumber ribbons)
  • Citrus juicer

Ingredients

  • 2 medium cucumbers peeled and chopped
  • 2- inch piece fresh ginger peeled and sliced
  • 1/4 cup fresh lime juice about 2-3 limes
  • 2 tablespoons honey or agave syrup
  • 8-10 fresh mint leaves plus extra for garnish
  • 2 cups cold sparkling water
  • 1 cup ice cubes
  • Cucumber slices or ribbons for garnish
  • Lime wheels for garnish

Optional add-ins:

  • 1/4 teaspoon cayenne pepper for extra heat
  • 1 tablespoon chia seeds for texture and nutrients
  • A splash of coconut water for tropical flavor

All ingredients should be fresh for the best taste. The cucumber provides a cooling effect, while ginger adds a spicy kick that balances the sweetness of honey.

Instructions

Prepare the cucumber base:

  • Peel and chop the cucumbers.
  • Add cucumbers to a blender and blend until smooth.
  • Strain the cucumber juice through a fine mesh strainer into a pitcher, pressing gently to extract all juice.

Add the flavors:

  • Peel and finely chop or grate the ginger.
  • In the pitcher, muddle the ginger and mint leaves to release their flavors.
  • Stir in the lime juice and honey until fully dissolved.

Finish the mocktail:

  • Add ice to the pitcher and pour in sparkling water.
  • Stir gently to combine all ingredients.
  • Taste and adjust sweetness if needed.

Serve and garnish:

  • Pour into glasses filled with ice.
  • Garnish with cucumber slices, mint leaves, and lime wheels.
  • Serve immediately for best flavor and fizz.

Notes

This mocktail can be prepared up to 24 hours ahead, but add the sparkling water just before serving to maintain the fizz. For a smoother texture, you can skip straining the cucumber if you don't mind some pulp.
The recipe is easy to scale up for parties. Simply multiply the ingredients by the number of servings needed and prepare in a large pitcher or punch bowl.
For a stronger ginger flavor, steep the ginger in hot water for 10 minutes, cool, then add to the mix. Kids might prefer a milder version with less ginger and more honey.
The drink stays fresh in the refrigerator for up to 2 days, though the cucumber may settle at the bottom. Just stir before serving.
