Ingredients

  • 2 oz coconut rum
  • 4 oz cranberry juice
  • 1 oz cream of coconut
  • 1/2 oz fresh lime juice
  • Ice cubes
  • Coconut flakes for garnish
  • Fresh cranberries for garnish

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Pour coconut rum, cranberry juice, cream of coconut, and lime juice into the shaker.
  • Shake vigorously for 10-15 seconds until well chilled.
  • Strain the mixture into a highball glass filled with fresh ice.
  • Garnish with coconut flakes and fresh cranberries on top.

Notes

Store cream of coconut in the refrigerator after opening. It will stay fresh for up to 2 weeks.
For a mocktail version, replace coconut rum with coconut water and add a splash of coconut extract.
The drink can be made in larger batches for parties. Multiply the ingredients by the number of servings needed.
Use unsweetened cranberry juice for a less sweet drink. Adjust sweetness by adding more or less cream of coconut.
