Ingredients

  • 4 cups fresh watermelon chunks seeds removed
  • 1 cup coconut milk
  • 1/2 cup lime juice about 4 limes
  • 2 tablespoons honey or agave nectar
  • 1 cup coconut water
  • Ice cubes
  • Mint leaves for garnish
  • Watermelon wedges for garnish

Instructions

  • Place the watermelon chunks in a blender and blend until smooth.
  • Strain the watermelon juice through a fine-mesh strainer into a large pitcher.
  • Add coconut milk, lime juice, and honey to the pitcher. Stir well until the honey dissolves.
  • Pour in the coconut water and mix gently.
  • Fill glasses with ice cubes. Then, pour the mixture over ice.
  • Top each glass with mint leaves and watermelon wedges.

Notes

The drink stays fresh in the fridge for up to 24 hours.
For best results, use ripe watermelon and full-fat coconut milk.
Make it less sweet by reducing the honey, or sweeter by adding more.
Replace regular ice cubes with frozen watermelon chunks to prevent dilution.
Add a splash of sparkling water just before serving for extra fizz.
