Ingredients

For 2 servings:

  • 2 cups fresh watermelon chunks
  • 1/2 cup coconut rum
  • 1/4 cup coconut water
  • 1 tablespoon lime juice
  • 1 cup ice
  • Watermelon slices and mint leaves for garnish

Fresh watermelon is best for this recipe. If you can't find coconut rum, regular white rum works too.

Instructions

  • Cut the watermelon into small chunks.
  • Add watermelon, coconut rum, coconut water, and lime juice to the blender.
  • Blend until smooth, about 30 seconds.
  • Fill the cocktail shaker with ice.
  • Pour the blended mixture into the shaker.
  • Shake well for 10-15 seconds.
  • Strain into tall glasses filled with ice.
  • Garnish with watermelon slices and mint leaves.

Serve right away while it's cold and fresh.

    Notes

    This recipe is easy to adjust. For a stronger drink, add more rum. For a milder version, use more coconut water.
    You can make it non-alcoholic by skipping the rum and adding extra coconut water.
    If the watermelon isn't sweet enough, add a little simple syrup.
    For a frozen version, blend everything with extra ice until slushy.
    This cocktail doesn't keep well, so it's best to make it right before serving.
