Ingredients

  • 3 cups fresh watermelon cubed and seeds removed
  • 1 cup coconut milk canned, full-fat preferred
  • 1/4 cup lime juice about 2 fresh limes
  • 2 tablespoons honey or agave syrup
  • 2 cups ice cubes
  • 1/4 cup coconut water optional, for a thinner consistency
  • Watermelon wedges for garnish
  • Mint leaves for garnish
  • Toasted coconut flakes for garnish optional

For best results, use a ripe, sweet watermelon.

Instructions

  • Cut the watermelon into 1-inch cubes, removing any seeds.
  • Add watermelon, coconut milk, lime juice, and honey to the blender.
  • Blend on high speed for 30 seconds until smooth.
  • Add ice cubes and blend again until the mixture reaches a slushy consistency.
  • If the mixture is too thick, add coconut water a tablespoon at a time until you reach your desired consistency.
  • Taste and adjust sweetness if needed by adding more honey.
  • Pour into chilled glasses.
  • Garnish with watermelon wedges, mint leaves, and a sprinkle of toasted coconut flakes if desired.
  • Serve immediately with a straw and enjoy!

The mocktail is best enjoyed fresh. The mixture will separate if left sitting too long.

    Notes

    This recipe makes about 4 servings. For a party, the base mixture can be prepared up to 24 hours ahead and stored in the refrigerator. Add ice and blend just before serving.
    For a more tropical flavor, substitute pineapple juice for the lime juice.
