Ingredients

  • 4 cups seedless watermelon cubed
  • 1 cup coconut rum
  • 0.5 cup white rum
  • 1 cup pineapple juice
  • 0.5 cup lime juice freshly squeezed
  • 0.25 cup simple syrup adjust to taste
  • 1 cup sparkling water or lemon-lime soda
  • fresh mint leaves for garnish
  • lime slices for garnish
  • watermelon wedges for garnish
  • ice cubes or frozen watermelon chunks

Instructions

  • Place watermelon cubes in a blender and puree until smooth.
  • Strain the puree through a fine mesh strainer into a large pitcher or punch bowl.
  • Add coconut rum, white rum, pineapple juice, lime juice, and simple syrup. Stir until well combined.
  • Refrigerate and chill for at least 30 minutes.
  • Right before serving, add sparkling water (or lemon-lime soda) and gently stir.
  • Fill glasses with ice or frozen watermelon cubes, pour punch, and garnish with mint, lime slices, and watermelon wedges.

Notes

Use ripe watermelon for natural sweetness and reduce the simple syrup if your fruit is very sweet. Swap some rum for extra sparkling water for a lighter version, or use lemon-lime soda for a sweeter, fizzier style. Keep leftover punch chilled and enjoy within a day.
