- 4 cups fresh watermelon chunks seeds removed
- 1 cup coconut water
- 2 tablespoons fresh lime juice
- 1/4 cup simple syrup or honey adjust to taste
- 1/2 cup coconut milk
- 2 cups ice cubes
- Fresh mint leaves for garnish
- Toasted coconut flakes for rim optional
- Watermelon wedges for garnish
- 1 lime cut into wheels
For a lighter version, you can use more coconut water and less coconut milk.
