Ingredients

For 4 servings:

  • 4 cups fresh watermelon chunks seeds removed
  • 1 cup coconut water
  • 2 tablespoons fresh lime juice
  • 1/4 cup simple syrup or honey adjust to taste
  • 1/2 cup coconut milk
  • 2 cups ice cubes
  • Fresh mint leaves for garnish
  • Toasted coconut flakes for rim optional
  • Watermelon wedges for garnish
  • 1 lime cut into wheels

For a lighter version, you can use more coconut water and less coconut milk.

Instructions

  • Prepare the watermelon: Cut watermelon into 1-inch chunks, removing seeds as you go. Set aside a few small pieces for garnish.
  • Blend the base: Add watermelon chunks, coconut water, and lime juice to the blender. Blend until smooth, about 30-45 seconds.
  • Strain the mixture: Pour through a fine mesh strainer into a pitcher to remove pulp. Press gently with a spoon to extract juice.
  • Add sweetener: Stir in simple syrup or honey until dissolved. Taste and adjust sweetness if needed.
  • Combine with coconut milk: Add coconut milk and stir gently until well mixed.
  • Chill the mixture: Refrigerate for at least 30 minutes.
  • Serve: Fill glasses with ice. Pour the chilled mixture over ice. Garnish with mint leaves, watermelon wedges, and a lime wheel.
  • Optional rim: Before pouring, wet the rim of each glass with lime juice and dip in toasted coconut flakes.

Notes

This mocktail can be prepared up to 24 hours in advance and stored in the refrigerator. Just stir well before serving as separation may occur.
For an adult version, add 1-2 ounces of white rum or vodka per serving. You can substitute agave nectar or maple syrup for the simple syrup.
Frozen watermelon chunks make a slushier version—just reduce the ice by half.
For a fizzy twist, add 1/4 cup of soda water to each glass just before serving.
Those with coconut allergies can substitute almond milk or oat milk for the coconut milk, and pineapple juice for the coconut water.
