Equipment

  • Cocktail shaker
  • Muddler
  • Bar spoon
  • Jigger
  • Highball or tall glass
  • Small strainer
  • Ice cubes

Ingredients

  • 2 oz white rum or coconut rum
  • 1 oz pineapple juice
  • 1 oz coconut water or coconut cream
  • 1 lime cut into wedges
  • 6-8 fresh mint leaves
  • 1-2 tsp sugar or simple syrup
  • club soda to top
  • ice cubes
  • pineapple slice or mint sprig for garnish

Instructions

  • Muddle lime wedges and sugar in the bottom of a shaker to release juice.
  • Add mint leaves and press gently.
  • Add rum, pineapple juice, coconut water or cream, and ice. Shake well.
  • Strain into a tall glass filled with ice. Top with club soda.
  • Garnish with pineapple slice and mint sprig. Serve immediately.

Notes

For a lighter mojito, use coconut water; for a dessert-like drink, use coconut cream. Add more syrup for sweetness, or chill the glass for extra refreshment.
