Equipment

  • Cocktail shaker with strainer
  • Jigger or measuring tool
  • Chilled martini glass
  • Bar spoon
  • Small plate (for rimming with coconut flakes)

Ingredients

  • 2 oz vodka plain or coconut flavored
  • 1 oz coconut rum
  • 1 oz cream of coconut or coconut cream
  • 0.5 oz peppermint schnapps
  • 0.25 oz fresh lime juice
  • 0.25 oz simple syrup optional
  • coconut flakes for garnish
  • ice cubes for shaking

Instructions

  • Chill martini glass in the freezer. Rim glass with lime juice and dip in coconut flakes for garnish.
  • Fill cocktail shaker with ice. Add vodka, coconut rum, cream of coconut, peppermint schnapps, lime juice, and (if using) simple syrup.
  • Shake well for about 15 seconds until frothy and chilled.
  • Strain into chilled martini glass. Garnish with more coconut flakes if desired and serve immediately.

Notes

Use coconut vodka for extra coconut flavor. No schnapps? Try peppermint extract (just a drop). Toast coconut flakes for a nutty twist. Fresh lime juice keeps it balanced and bright.
