Equipment

  • Blender or cocktail shaker
  • Measuring cups and spoons
  • Citrus juicer (optional, but helpful)
  • Tall glasses for serving
  • Ice cube tray
  • Straws
  • Knife and cutting board for garnishes

Ingredients

For 2 servings:

  • 1 cup coconut milk
  • 1 cup fresh orange juice about 3-4 medium oranges
  • 2 tablespoons simple syrup or honey
  • 1 cup ice cubes
  • 1/4 teaspoon vanilla extract
  • 1 tablespoon lime juice
  • Orange slices for garnish
  • Toasted coconut flakes for garnish optional
  • Mint leaves for garnish optional

For best results, use chilled coconut milk and freshly squeezed orange juice. The quality of these two main ingredients will greatly impact the final taste.

Instructions

  • Prepare the juices: Squeeze oranges to collect 1 cup of fresh juice. Strain to remove pulp if desired.
  • Combine ingredients: Add coconut milk, orange juice, simple syrup, vanilla extract, and lime juice to your blender.
  • Blend: Add ice cubes and blend until smooth and frothy, about 30-45 seconds.
  • Taste and adjust: Sample the mixture and add more sweetener or lime juice if needed.
  • Serve: Pour into chilled glasses and garnish with orange slices, toasted coconut flakes, and mint leaves.
  • Optional variation: For a layered effect, pour coconut milk first, then slowly add orange juice over the back of a spoon.

The mocktail is best enjoyed immediately while cold and frothy.

    Notes

This recipe can be customized in several ways. For a lighter version, substitute coconut water for coconut milk. Add a splash of sparkling water for a bubbly texture.
Keep leftover mocktail in the refrigerator for up to 24 hours, though separation may occur. Simply shake or stir before serving.
For an adult version, add 1-2 ounces of white rum per serving. The coconut orange cooler pairs well with spicy foods, grilled dishes, and tropical-themed meals.
For special occasions, freeze some of the orange juice in ice cube trays to use instead of regular ice. This prevents dilution as the ice melts.
