Ingredients

  • 1 cup coconut milk full-fat for a creamier texture
  • 1/4 cup fresh mint leaves plus extra for garnish
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or simple syrup
  • 1/2 cup coconut water
  • 1 cup ice cubes
  • Lime wheels for garnish
  • Optional: 1/4 teaspoon coconut extract for a stronger flavor
  • Optional: Toasted coconut flakes for rim

The quality of ingredients matters. Choose fresh mint with bright green leaves. Refrigerate coconut milk before using. For a lighter version, replace some coconut milk with more coconut water.

Instructions

  • Prepare the glass: If using coconut flakes, dip the rim of each glass in water then in toasted coconut flakes.
  • Muddle the mint: Place mint leaves in the bottom of a cocktail shaker or blender. Gently muddle to release oils.
  • Mix the base: Add coconut milk, lime juice, and honey to the mint. Shake or blend for 10 seconds.
  • Add remaining ingredients: Pour in coconut water and add ice. Shake vigorously for 20 seconds or blend until smooth.
  • Strain and serve: Pour through a fine mesh strainer into prepared glasses. Add fresh ice if desired.
  • Garnish: Add a lime wheel and fresh mint sprig to each glass before serving.

Serve immediately for the best flavor and texture.

    Notes

    This recipe makes two 8-ounce servings. The mocktail can be prepared up to 4 hours ahead, but add fresh ice and stir before serving.
    For a party-sized batch, multiply ingredients by four but add ice only when serving. Store the mixture covered in the refrigerator.
    Children typically enjoy this recipe, but reduce the mint for a less intense flavor. Adults may add 1-2 ounces of white rum or coconut rum per serving to create an alcoholic version.
    The drink pairs well with spicy foods or tropical desserts. For dietary needs, substitute maple syrup or agave for honey to make it vegan-friendly.
