Ingredients

For one cocktail:

  • 2 oz coconut rum
  • 1 oz fresh lime juice
  • 1 oz cream of coconut
  • 2 oz club soda
  • 1 lime wedge for garnish
  • Ice cubes

Fresh lime juice is key for the best flavor. Cream of coconut adds richness. Club soda gives the drink a light, bubbly texture. Use a quality coconut rum for the best taste.

Instructions

  • Fill the cocktail shaker with ice.
  • Add coconut rum, lime juice, and cream of coconut to the shaker.
  • Shake well for 10-15 seconds.
  • Strain the mixture into a highball glass filled with ice.
  • Top with club soda and stir gently.
  • Garnish with a lime wedge on the rim of the glass.
  • Serve and enjoy right away while cold and bubbly.

The drink should look cloudy white with a hint of green from the lime. The flavors will meld as the ice melts slightly.
