  • Measuring cups and spoons
  • Citrus juicer
  • Tall serving glass
  • Ice cube tray

Ingredients

  • 2 oz cream of coconut
  • 1 oz fresh lime juice about 1 medium lime
  • 4 oz sparkling water
  • 1 cup ice cubes
  • 1 lime wheel for garnish
  • Fresh mint leaves for garnish
  • Optional: 1/2 oz simple syrup if extra sweetness is needed

Instructions

  • Fill the cocktail shaker halfway with ice cubes.
  • Add cream of coconut and fresh lime juice to the shaker.
  • Shake the mixture for 15-20 seconds until well chilled.
  • Fill a tall glass with fresh ice cubes.
  • Strain the coconut-lime mixture into the glass.
  • Top with sparkling water and stir gently.
  • Garnish with a lime wheel and fresh mint leaves.

Notes

The drink tastes best when served right away while the sparkling water is still bubbly.
Store cream of coconut in the fridge after opening. It stays fresh for up to 1 week.
For a frozen version, blend all ingredients except sparkling water with crushed ice. Pour into glasses and top with sparkling water.
Make sure to use cream of coconut, not coconut milk. Cream of coconut is thicker and sweeter.
The recipe makes one 8-ounce serving. Double or triple ingredients to serve more people.
