The drink tastes best when served right away while the sparkling water is still bubbly.Store cream of coconut in the fridge after opening. It stays fresh for up to 1 week. For a frozen version, blend all ingredients except sparkling water with crushed ice. Pour into glasses and top with sparkling water.Make sure to use cream of coconut, not coconut milk. Cream of coconut is thicker and sweeter. The recipe makes one 8-ounce serving.
