Instructions
Fill a Collins glass with ice.
Pour in tequila and fresh lime juice. Add cream of coconut if using for a sweeter, more tropical flavor.
Stir gently with a bar spoon to combine.
Top off with sparkling mineral water until almost full.
Stir once or twice more to blend. Garnish with a lime wheel. Serve immediately while cold and fizzy.
Notes
Fresh lime juice is best for flavor. Use Topo Chico for strong bubbles. If desired, rim glass with salt before filling. Cream of coconut makes the drink sweeter and more tropical. Serve cold for maximum refreshment.
