  • Cocktail shaker
  • Jigger or measuring cup
  • Citrus juicer
  • Highball glass
  • Ice
  • Strainer
  • Bar spoon

Ingredients

Makes 1 serving

  • 2 oz coconut cream
  • 1.5 oz white rum
  • 1 oz fresh lime juice
  • 4 oz sparkling water
  • Ice cubes
  • 1 lime wheel for garnish
  • 1 mint sprig for garnish

Instructions

  • Fill the cocktail shaker with ice.
  • Add coconut cream and lime juice to the shaker.
  • If you're using rum, add it to the shaker.
  • Shake for 10-15 seconds until well chilled.
  • Fill a highball glass with fresh ice.
  • Strain the mixture into the glass.
  • Top with sparkling water and stir gently with a bar spoon.
  • Garnish with a lime wheel and mint sprig.

Notes

The drink can be made non-alcoholic by skipping the rum.
Store coconut cream in the fridge after opening. It will stay fresh for up to 1 week.
For best results, use fresh lime juice instead of bottled juice.
This recipe can be doubled or tripled for serving groups. Mix the coconut cream and lime juice in advance, but add sparkling water just before serving to maintain fizz.
