Ingredients

  • 2 oz coconut rum
  • 1 oz fresh lime juice
  • 1 oz cream of coconut
  • 2 oz club soda
  • Ice cubes
  • Lime wheel for garnish
  • Fresh mint sprig for garnish

Optional: coconut flakes for rim

Instructions

  • Fill a cocktail shaker with ice cubes.
  • Pour coconut rum, lime juice, and cream of coconut into the shaker.
  • Shake for 15-20 seconds until well chilled.
  • Fill a Collins glass with fresh ice cubes.
  • Strain the mixture into the glass.
  • Top with club soda and stir gently.
  • Garnish with a lime wheel and mint sprig.
  • Optional: Before step 4, wet the rim of the glass with lime juice and dip in coconut flakes.

Notes

The drink tastes best with fresh-squeezed lime juice. Store-bought juice can make the cocktail too sour or bitter.
Keep cream of coconut refrigerated after opening. It stays fresh for up to 2 weeks.
For a non-alcoholic version, replace coconut rum with coconut water and add a splash of coconut extract.
The drink can be made in larger batches for parties. Mix everything except club soda ahead of time and add it just before serving.
