Ingredients

  • 1 cup coconut water
  • 2 tablespoons coconut cream
  • 1 tablespoon fresh lime juice
  • 2 tablespoons lavender simple syrup*
  • 1/4 cup sparkling water
  • Ice cubes
  • Fresh lavender sprigs for garnish
  • Toasted coconut flakes for garnish

*For lavender simple syrup:

  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons dried culinary lavender

The balance of coconut water and cream provides both refreshment and richness. The lavender syrup adds a subtle floral note without overwhelming the drink.

Instructions

  • Make lavender simple syrup first: Combine water and sugar in a small saucepan. Bring to a simmer until sugar dissolves. Add dried lavender, remove from heat, and steep for 15 minutes. Strain and cool completely.
  • Fill a cocktail shaker halfway with ice. Add coconut water, coconut cream, lime juice, and lavender syrup.
  • Shake vigorously for 15-20 seconds until well-chilled.
  • Strain into a highball glass filled with fresh ice.
  • Top with sparkling water and stir gently to combine.
  • Garnish with a lavender sprig and a sprinkle of toasted coconut flakes.

The drink comes together quickly once you have the syrup prepared. The shaking step is important to properly blend the coconut cream with the other ingredients.

    Notes

    This mocktail can be prepared in advance (without sparkling water) and stored in the refrigerator for up to 24 hours. Add the sparkling water just before serving.
    For a frozen version, blend all ingredients except sparkling water with 1 cup of ice. Pour into glasses and top with sparkling water.
    The lavender syrup keeps in the refrigerator for up to two weeks and can be used in other drinks or desserts.
    For a sweeter drink, add an extra tablespoon of lavender syrup. For less sweetness, reduce the syrup and add more lime juice.
    Children especially enjoy this drink with a colorful paper straw and extra coconut on top.
