  • Tea infuser or strainer
  • Measuring cups and spoons
  • Citrus juicer
  • Stirring spoon
  • Highball glasses
  • Ice cube tray
  • Cutting board and knife

Ingredients

  • 4 hibiscus tea bags or 2 tablespoons loose hibiscus tea
  • 4 cups water
  • 1 cup coconut milk
  • 1/4 cup honey or agave nectar adjust to taste
  • 2 tablespoons fresh lime juice
  • 1 teaspoon vanilla extract
  • Ice cubes
  • Fresh mint leaves for garnish
  • Lime slices for garnish

Optional: 1/4 teaspoon coconut extract for extra coconut flavor

Instructions

  • Bring 4 cups of water to a boil in a pot.
  • Remove from heat and add hibiscus tea bags. Steep for 5-7 minutes.
  • Remove tea bags and let the tea cool to room temperature.
  • Pour the cooled tea into a large pitcher. Add honey or agave nectar and stir until completely dissolved.
  • Add coconut milk, lime juice, and vanilla extract to the pitcher.
  • Stir well to combine all ingredients.
  • Refrigerate for at least 2 hours or overnight for best flavor.
  • When ready to serve, fill glasses with ice cubes. Pour the tea mixture over ice, leaving room at the top for garnishes.
  • Garnish each glass with a sprig of fresh mint and a slice of lime.

Serve immediately.

    Notes

    This recipe can be prepared up to 2 days in advance and stored in the refrigerator. The coconut milk may separate slightly - simply stir before serving.
    For a special presentation, freeze edible flowers in ice cubes to add to the drinks. The recipe can be easily doubled for larger gatherings.
    Those who prefer a sweeter drink can add more honey. For a lighter version, substitute light coconut milk or coconut water for the full-fat coconut milk.
    The hibiscus tea provides a good source of vitamin C and antioxidants. This mocktail works well for summer parties, baby showers, or as a refreshing afternoon drink.
