Ingredients

  • 1 cup coconut water
  • 2 tablespoons cream of coconut
  • 2 tablespoons fresh lime juice
  • 1 tablespoon fresh ginger peeled and grated
  • 1 tablespoon simple syrup equal parts sugar and water, boiled until dissolved
  • 4-5 fresh mint leaves
  • Soda water to top
  • Ice cubes

Instructions

  • Prepare the ginger: Peel and finely grate about 1 inch of fresh ginger root.
  • Muddle the flavors: In a cocktail shaker, gently muddle the grated ginger with mint leaves to release their oils and flavors.
  • Add wet ingredients: Pour in the coconut water, cream of coconut, lime juice, and simple syrup.
  • Shake well: Add ice to the shaker and shake vigorously for 15-20 seconds until well chilled.
  • Strain and serve: Strain the mixture into ice-filled highball glasses, filling about ¾ full.
  • Finish the drink: Top with a splash of soda water for some fizz. Stir gently to combine.
  • Garnish: Add a lime wheel, mint sprig, and a sprinkle of toasted coconut flakes.

Notes

This recipe makes 2 servings and can be easily doubled for entertaining.
For a stronger ginger flavor, let the grated ginger steep in the coconut water for 30 minutes before mixing.
Make it ahead by preparing the base mixture (without soda water) up to 24 hours in advance. Store in the refrigerator and add ice and soda water just before serving.
For a smoother texture, double-strain the mixture through a fine mesh strainer to remove ginger fibers.
Adjust sweetness by changing the amount of simple syrup. For a lower-sugar version, use plain coconut water and skip the cream of coconut.
