  • Cocktail shaker

Ingredients

  • 1 cup fresh blueberries plus extra for garnish
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup
  • ¼ cup coconut cream
  • ½ cup coconut water
  • ¼ cup club soda
  • 6-8 fresh mint leaves
  • Ice cubes
  • Lime wheel for garnish

For best results, use fresh blueberries rather than frozen. The coconut cream should be unsweetened for better control of the sweetness level.

Instructions

  • Place ¾ cup of blueberries in the bottom of the cocktail shaker.
  • Add mint leaves and honey/maple syrup.
  • Gently muddle to release the blueberry juice and mint oils.
  • Pour in the lime juice, coconut cream, and coconut water.
  • Add ice and shake vigorously for 15-20 seconds.
  • Strain the mixture into a highball glass filled with fresh ice. Top with club soda and stir gently.
  • Garnish with remaining blueberries, a sprig of mint, and a lime wheel on the rim of the glass.

Notes

This mocktail can be prepared up to 3 hours ahead (without the club soda) and stored in the refrigerator. Just add the club soda right before serving.
For a sweeter version, increase the honey to 2 tablespoons.
If serving at a party, prepare a large batch by multiplying all ingredients by the number of servings needed.
The recipe makes one 12-ounce serving. For a fun variation, freeze coconut water in ice cube trays and use these instead of regular ice cubes. This prevents dilution as the ice melts.
