Ingredients

  • 2 oz gin
  • 0.75 oz clove-infused simple syrup see notes
  • 0.75 oz fresh lemon juice
  • 3 oz ginger beer
  • Ice cubes
  • Whole cloves for garnish
  • Lemon twist for garnish

Instructions

  • To make clove syrup: Simmer equal parts sugar and water with whole cloves for 10 minutes. Strain and cool.
  • In a shaker with ice, combine gin, clove syrup, and lemon juice. Shake well.
  • Strain into a highball glass filled with ice.
  • Top with ginger beer and stir gently.
  • Garnish with whole cloves and a lemon twist.

Notes

Make syrup in advance for quick mixing. Adjust syrup and lemon for balance. Try with vodka or rum instead of gin. Use fresh ginger beer for best fizz.
